Should i focus on making a priest which is rite now a begginer or focus on this hermit or lvl 53 CK nightwalker? cause clercs are easy to train and priest are kinda fun.

get your cleric to a priest and then train your nightwalker for the extra +12 stat and leech your hermit

Priest good if you dont have too much funds. Hermit is just badass. I say hermit but if you still want to do priest, make your sin a NL then start priest. Or just switch off whenever you want
