Playing hard to get - how do u break it?

I have come to the conclusion that my gf is DEFINITELY EXTREMELY the jealous type, and she wants everything to go her way and is playing hard to get, as in doesn't want to talk to me much and doesn't want to spend time with me. My question is...how do yu break the "playing hard to get" shield and earn her trust and affection.
