Because Adam and Eve is a myth that shows how Jews believed God created the world, saw everything was good, created people in his image, and how sin turns people away from God. It didn't really happen.

It's implied that there were other humans besides Adam and Eve. After Cain kills Abel and is banished, Cain shows fear that anyone who sees him might strike him down. God promises that those who kill him will be punished ten-fold (or some other multiplier). Unless...during the time period between Cain's birth and his banishment, Adam and Eve were popping out babies like crazy.
