just wondering ... do all the stats of the 120 items increase each time they level? like ... would the attack of a glove increase when they level?

Level 120 items as in resverse items/timeless items, then yes. They level up everytime you train.

Everytime a reverse/timeless weapon levels up it gains a random stat. They need to gain the exp it is required to lvl from 120-121 in order to gain one level.They have to be the weapon you are using to gain exp from kills.

Also onve the reach max lvl theres a chance of it giving you 1 skill point to a 4th job skill. i.e The reverse warrior boot has a chance of giving power stance.

Ehh maybe the boot really gives jump but his was below average +0 jump? :S And the 4th job skill from an equip is awesome ^^

Random stats are given out but such as a glove for warrior it has a high chance of giving a stat increase in str or dex rather than luk pr int. For equips atk stats will not be added but for weapons it is possible for you to gain atk points.
