1) Does Paralyze always only hit ONE nearby monster? 2) Are Himes susceptible to fire demon even though they are originally strong against ice?

Paralyze is a single-hit skill, but it's damn strong and it's paralyze put's ice's freezing to shame. I never trained at himes, sorry. I do know using FD on them makes them poisonable.

1 Paralyze > Max Comp with (and I think without) an E-Wand due to superior speed and power. It may be single target, but it's very useful. Fire Demon makes Poison Immune monsters poisonable. It also makes them weak to Ice. This does not apply to bosses, but it is quite useful for when you are bored. You can freeze Ice monsters and poison Poison monsters.

Yea paralyze only hits a single target , but its still stronger than compo . and Yes fire demon applies to himes.

That's why I was particularly asking about himes who are originaly strong to ice. Or better yet any creature who originally CANNOT be frozen.

Himes are not strong to ice, theyre strong against fire, and immune to poison. Fire demon makes the weak to ice [elquines] and paralyze is the superior single target skill that FP's get as stated previously.
