I'm talking about the extra SP from level 27-30. What do I use it on? Soul?

Its either Soul or Iron Body which we both know is bad. Soul is kinda a + and iron body is....not much. Get SOUL FOR TEH WIN

And by level 30 im planning to have: Maxed HP increase Maxed Slash Blast Maxed Power Strike 11 Soul Although, you could actually ditch slash blast, because it gets replaced with a much stronger move in 2nd job, plus has range too. And use those points to max Soul. The problem with Soul is, is that once you summon it, it stays there until the time runs out, theres no buff icon in the corner to cancel it. So sometimes it'll just randomly attack, even if you don't want it to.
