How do we know that there's 800+ quests available because Im starting to redo quests and it doesnt seem there's enough to make it. I mean maybe because of being 120+ i missed out on some quests that required to be lower lvl? Basically does anyone know how many total quests are there to do ?

It counts chain quests. That book of the ancient quest is like +20 alone.

Yeah, the miniature quests inside the main quest.
