I'm quite unfunded, and I just wanted to know if 80 dex would be the "right" time to cap it?

80 is a good number actually. All you need then is 40 more DEX to wield a nice Mamba / DT.

Are you a Bandit or Assasin? What is the final weapon you wish to equip? Is there a set of equips you wat to use for end-game equips? How much money do you have? How much money are you willing to spend? Too vague of a question to be answered...if it matters, I was unfunded and capped my Dex at 90, and I get +50 dex from my current equips to wear a blood dagger~

I can help you out, if you answer the last 5 of my 6 previously posted questions~ For basic info.: You can various equips that are scrolled for dex/ have a good amount of dex on them. Basic set-up would be a Zakum Helm, earings, shoes, overall (or top and bottom combo, where the top is scrolled with luck and the bottom is scrolled for dex), cape, and pendant.
